This class is where you get to know your pan. We'll start with the science: why copper conducts heat the way it does, how to read it as it heats, and what that means for how you cook. From there, you'll learn how to care for your copper so it lasts — cleaning, storage, and the small habits that keep it performing beautifully for years.
Then we cook. You'll make brown butter from scratch and build your first pan sauce, two techniques you'll use in nearly everything that follows in the series. By the end, you'll leave with the fundamentals of cooking in copper and the confidence to reach for your pan at home.
