Every series needs an ending worth remembering. Crêpes suzette is that ending — a dish built entirely around drama, built entirely in copper, and finished with real fire.
The crêpes themselves are pre-made, so class time is spent where it matters: building the orange-butter sauce in the pan, reducing it to the right consistency, and learning the flambé itself — how to add the liqueur, control the flame safely, and finish the dish with the kind of tableside moment that makes copper worth having. You'll get hands-on time with the sauce and the flambé technique, with safety protocol walked through step by step.
This class is less about volume of technique and more about precision and confidence with fire — a fitting capstone after three classes spent building your feel for the pan.
